This Baked Ricotta is a quick, easy and super simple appetizer. Delicious served warm or cold, pair it with crostini, crackers or veggies

Ingredients:

• 1 large egg

• 1 ½ cups fresh whey ricotta

• 1/4 cup shredded parmesan cheese (optional but makes for extra cheesy goodness)

• 1 teaspoon fresh or dried oregano, basil or Italian seasoning

• 1 teaspoon dried garlic powder or 1-3 cloves minced fresh garlic
• ¼ teaspoon salt
• ¼ teaspoon black pepper

• 1 tablespoon olive oil
• 1 – 2 tablespoons chopped bacon (optional for topping)
• 1 – 2 tablespoons additional parmesan cheese (optional for topping)
• 1 tablespoon chopped fresh garlic chives (for topping)

Instructions:
1. Pre-heat oven to 400F (200C).
2. In a medium bowl beat the egg with a whisk, then add the ricotta cheese, parmesan cheese, herbs, garlic, salt and pepper, blend/whisk together until completed combined.
3. Spoon the ricotta into a small 5-6 inch oven safe baking dish, then sprinkle with the bacon, and extra parmesan cheese. Bake for approximately 20-30 minutes or until golden brown on top. Remove from the oven and drizzle with a tablespoon of olive oil and chives Serve warm or room temperature.
